Cheaper, Greener Recipes - Mocha Bran Cookies

My husband loves chocolate. It's his one indulgence. Any of our friends know Mat has an enormous amount of chocolate stored in one of our kitchen cupboards that has been dedicated JUST for his chocolate.

But in trying to be healthy, he's definitely limited how much chocolate he eats. And for me, I've had to re-think what sort of chocolate orientated baking I do.

I found this recipe from the Heart and Stroke Foundation


Mocha Bran Cookies

1 cup flour
1 cup whole wheat flour
1/4 cup cocoa
2 tsp baking powder
1 cup bran cereal
1/2 cup milk
2 tsp instant coffee granuals
1/2 cup margarine
1 cup brown sugar
3 egg whites
2 tsp vanilla

Directions: In a large bowl blend margarine & sugar. Beat in egg whites and vanilla.
In a small bowl mix cereal & milk & instant coffee until soft. Add this to the margarine mix
Then stir in flours, cocoa, & baking powder
Drop by tablespoon on to a baking sheet
Bake at 350 for 10 minutes

Notes: If you wanted to add a little extra to these, toss in 1 cup of chocolate chips. Also, do not use bran flakes...its just not the same at all.

Whys & Whats: Regular bran cereals contain preservatives so if you want to avoid them, be sure to purchase an organic brand.

Our Assessment: I an not a fan of cookies or baked goods. Mat loves these though & its so good to know that these cookies are pretty heart healthy for a cookie!
